牛肉炒飯 Stir-fried Rice With Shredded Beef

Ingredients:

* 1 bowl Cooked rice
* 100 g Beef, shredded
* 50 g Peas
* 1 pc Egg
* 1 stalk Spring onion
* 50 g Carrots
* ½ tsp Salt
* olive oil


Marinade:

* 1 tsp Cornstarch
* 1 tsp Light soya sauce
* 2 tsp Egg whites
* 1/3 tsp White sugar


材料:

* 1碗 涼飯
* 100克 牛肉絲
* 50克 青豆
* 1個 雞蛋
* 1支 青蔥
* 50克 胡蘿蔔
* 1/2小勺 食鹽
* 適量 橄欖油

醃料:

* 1小勺 玉米澱粉
* 1小勺 生抽
* 2小勺 蛋白
* 1/3小勺 白糖

Method:

1. Dice the carrots, chop the spring onion, and beat the egg. Mix the beef with the marinade and let stand for about 15 minutes.

2. Heat up a skillet with some oil. Poach the marinated beef briefly and drain. Leave a little of oil in the skillet to stir-fry the egg mixture into the small chunks.

3. Heat up a little of oil and add in the rice. Stir thoroughly until the rice has loosed and heated through. Add in carrots and peas. Stir briefly and return the beef and egg to the skillet. Season the rice with salt and sprinkle with chopped spring onion.

做法:

1. 胡蘿蔔切丁,蔥切花,雞蛋打散備用。牛肉絲加入醃料置15分鐘左右。

2. 鍋入適量橄欖油燒熱,將牛肉略過油撈起。留底油將蛋液炒成散塊起鍋備用。

3. 鍋入少許油燒熱,下白米飯大火快炒至米粒分開稱鬆散狀,加入胡蘿蔔,青豆翻炒片刻。牛肉絲,雞蛋回鍋翻炒。加入鹽調味,灑入蔥花拌炒即可。

貼士:

常聽說用萬年油或回鍋油所炮製的菜餚分外好味,但其實這相當不健康,因為食油經過反覆加熱後,容易發生化學變化,產生無揮發性的有毒物質,對健康無益。下次烹製油炸菜式時,最好不要使用過量食用油,而當發現油脂渾濁、沉澱或加熱時會起泡,即表示油脂已變壞,那就不應再使用了。

這次選擇橄欖油作為食用油,因為它是比較健康的植物油之一,下一篇文章我會再詳細一點說的它的健康價值。

睇落好似好似整喎!但我次次都整唔到咁既樣.

要炒得好看的確不易, 如果用隔夜飯炒會易一點.因為比較乾炒時就不會黏住.
